Smashed and Roasted Potatoes Recipe
15 small/new potatoes
3 cloves garlic, minced
¼ cup melted butter
Salt & pepper to taste
Fresh herbs of your choice
Boil the potatoes for 15 mins. Drain and allow them to cool before placing them on a lined baking sheet and pressing them down with a fork just enough to make sure they hold their smashed shape. Mince the garlic and mix it in with the melted butter. Brush the potatoes with the garlic butter and roast them at 375F for 10 mins or until they turn golden brown. I sprinkled a little fresh cilantro on my potatoes and used my homemade Toum/garlic sauce (which you can learn how to make if you book my chicken shawarma class) instead of minced garlic. I first got introduced to the idea of smashing my small potatoes from the one and only Jamie Oliver. Since then, it’s become a staple in our household and I absolutely love using my homemade Toum (garlic sauce) instead of minced garlic!
