Homemade Pop Tarts

Homemade Pop Tarts Recipe

2 cups AP flour

226 g Cold Unsalted Butter

½ cup Corn Syrup

¼ tsp Vanilla Extract

1 tsp Salt

1/2 cup Strawberry Jam (or any flavour of filling you prefer)

Simple Sugar Icing for topping:

1/4 cup Powdered Sugar

1/4 tsp Vanilla Syrup

1 tbsp Milk

In a bowl, grate the cold butter into the flour and salt. Gently mix it with your fingertips to make sure the flour coats all the pieces of butter. Then, add the corn syrup and vanilla. Mix the dough until it forms a ball, and chill it for 15 minutes before rolling out. Do not over-knead the dough and keep it chilled as you shape and fill the pop tarts.

Using a fork, press down the sides once you cut and fill them to seal the filling between both sides of the pastry. Finally, place the pop tarts on a lined baking sheet and bake them for 10-12 minutes in a preheated oven at 350F.

To make the icing, mix 1/2 cup of icing sugar with 1 tbsp of milk and ¼ tsp of vanilla extract. Your icing should be thin enough to ice your homemade pop tarts and thick enough as to not run off the top and sides.

You can absolutely make this recipe vegan-friendly by substituting the butter for vegan butter and the milk for water!
