Fluffy Pancakes Recipe

2 eggs, separated

1 tbsp Baking Powder

1 tsp Baking Soda

1 cup Flour

½ cup Buttermilk

2 tbsp Sugar

Separate the egg yolks from the whites. Whisk the egg whites until they start foaming then slowly incorporate the sugar as you continue whisking. You want the egg whites to form glossy stiff peaks.

In a separate bowl, beat the egg yolks with the buttermilk until they are pale yellow. (If you do not have any buttermilk, you can use the same amount of full-fat milk with a teaspoon of white vinegar.) Add the dry ingredients to the egg yolk mix and fold them in until they are well combined. Slowly fold the meringue into the egg yolk batter. Do not over-mix the batter otherwise, it will deflate and you will lose the incorporated air that will help make your pancakes fluffy.

Heat a non-stick pan to medium heat and using a ladle pour some batter in the middle making sure it forms a circle. Wait until small bubbles start to show through the top of the batter then flip the pancake gently. The pancakes take about a minute on each side depending on how hot your pan gets.

Fluffy pancakes are best enjoyed stacked a mile high and doused in maple syrup! I absolutely love adding a smear of butter onto my pancakes with a side of fresh berries or boozy banana foster. I promise this recipe is going to be a hit at brunch time!
